Buena Mulata peppers are a hot cayenne-shaped heirloom pepper that provides a similar amount of heat as the cayenne does. (30,000 to 50,000 Scoville heat units.) The difference to the cayenne and many hot peppers is Buena Mulata gives a sweetness to it that most others do not. The surprising and dramatic look to these chili peppers is their gorgeous changing of colors as they mature changing from a deep purple to orange to brownish and then to red. This hot pepper provides many culinary benefits as well as many cooks prefer this pepper to the cayenne or many other hot peppers.
